Cheesecake In Japan












CRUST
couldn't find graham cracker crumbs or even cookies 

Found a package of Marie biscuit also say Oreo cookies which would have also worked and we'd get to lick the insides.



Marie package had 21 cookies -7 packages of 3

We crushed cookies with a can but a rolling pin would also work- had to be careful of not bursting the cello package.



When crushed the cookies came to about 1.5 cups

Put in mixing bowl - crush any larger pieces

Add 1/4 cup sugar to cookie crumbs and stir together



Melt 1/3 of 200 gram package of butter in microwave or on stove

Stir melted butter into crumb mix


A
Spread crust into baking dish, pie pan or other container

spread about  1/4 inch deep

Now put crusts in fridge to set crust- as the butter hardens- the crust sets

With graham cracker crust- normally bake for 8 minutes at 350 F or 175 C



CHEESE FILLING
Put one package of cream cheese into bowl

Add condensed milk

For 200 gram cream cheese we used 300 ml condensed milk - 2.5 tubes approximately of 120 gram tubes



(Filling seemed a bit soft. checked Canadian sizes and the cream cheese is normally 250 grams) 

The cream cheese and condensed milk should be mixed together in a bowl. A Mixer works best. 

Add 4 tablespoons (15ml x 4) concentrated lemon juice from a bottle. Lemon juice from a lemon is not strong enough to cause the filling to set. 



Take crusts from fridge add filling to crusts.

Spread evenly, about 1/2 inch deep.



FRUIT TOPPING 

didn't find any pie filling- so decided to use mandarin oranges instead

Mandarin oranges- opened 2 cans

Put fruit and juice into a pan and heat on stove

Add corn starch or potato starch to thicken fruit into filling



When topping has thickened, place in fridge to cool.


Serving- Some people will put the fruit topping on and serve the dessert. Some will cut the dessert into pieces and serve on a plate and then add the fruit topping- This ways is best if you have more than one choice of topping.



Add Whipped cream as desired,

Notes
This is an cheesecake that is not cooked- we make it often for birthdays and special occasions
easy to make.
The crust is most often graham cracker crumb crust- at times we have just used premade graham cracker crumb pie crusts- which is less work than making the crust. 
Fruit toppings can be varied- Started out we used E.D.Smith pie fillings- cherry, raspberry, blueberry-
Lately we have been using a mix of frozen berries and fresh fruit- which is less sugar and tastes great
