Amish Tomato pie recipe

Cheesecake 11

CRUST
couldn't find graham cracker crumbs or even cookies 

Found a package of Marie biscuit also say Oreo cookies which would have also worked and we'd get to lick the insides.



Marie package had 21 cookies -7 packages of 3

We crushed cookies with a can but a rolling pin would also work- had to be careful of not bursting the cello package.



When crushed the cookies came to about 1.5 cups

Put in mixing bowl - crush any larger pieces

Add 1/4 cup sugar to cookie crumbs and stir together



Melt 1/3 of 200 gram package of butter in microwave or on stove

Stir melted butter into crumb mix


A
Spread crust into baking dish, pie pan or other container

spread about  1/4 inch deep

Now put crusts in fridge to set crust- as the butter hardens- the crust sets

With graham cracker crust- normally bake for 8 minutes at 350 F or 175 C



CHEESE FILLING
Put one package of cream cheese into bowl

Add condensed milk

For 200 gram cream cheese we used 300 ml condensed milk - 2.5 tubes approximately of 120 gram tubes



(Filling seemed a bit soft. checked Canadian sizes and the cream cheese is normally 250 grams) 

The cream cheese and condensed milk should be mixed together in a bowl. A Mixer works best. 

Add 4 tablespoons (15ml x 4) concentrated lemon juice from a bottle. Lemon juice from a lemon is not strong enough to cause the filling to set. 



Take crusts from fridge add filling to crusts.

Spread evenly, about 1/2 inch deep.



FRUIT TOPPING 

didn't find any pie filling- so decided to use mandarin oranges instead

Mandarin oranges- opened 2 cans

Put fruit and juice into a pan and heat on stove

Add corn starch or potato starch to thicken fruit into filling



When topping has thickened, place in fridge to cool.


Serving- Some people will put the fruit topping on and serve the dessert. Some will cut the dessert into pieces and serve on a plate and then add the fruit topping- This ways is best if you have more than one choice of topping.



Add Whipped cream as desired,

Cheesecake In Japan
Notes
This is an cheesecake that is not cooked- we make it often for birthdays and special occasions
easy to make.
The crust is most often graham cracker crumb crust- at times we have just used premade graham cracker crumb pie crusts- which is less work than making the crust. 
Fruit toppings can be varied- Started out we used E.D.Smith pie fillings- cherry, raspberry, blueberry-
Lately we have been using a mix of frozen berries and fresh fruit- which is less sugar and tastes great

Oatmeal Large Flakes
Ingredients:
100% oats.

Directions for Use:
Stovetop: In a pot, mix large flake oats with water and a pinch of salt. Bring to a boil, reduce heat and simmer for 3-5 minutes, stirring occasionally until desired consistency is achieved, and serve.
 
Microwave: In a bowl, mix large flake oats with water and a pinch of salt. Place in microwave and heat on medium for 3-5 minutes. Stir and serve.
 
1 Serving – ½ cup large flake oats, 1¼ cup water
2 Servings – ¾ cup large flake oats, 1¾ cups water
4 Servings – 1 cup large flake oats, 2 ½ cups water

Base sauce and hot sauce November 5, 2017


TRYING TO MAKE A replicable BASE SAUCE WITH GOOD TASTE
used grams to measure so that results can be replicated more easily
Test #1 
Ingredients
Onion chopped fine 243 gr
Garlic 29gr
Tomato roma 303 gr- cut so skins are not too big
Sweet red pepper seed removed 184 g
Carrot 100g
1 Apple 148 gr
1/4 tsp salt
2 Tbsp oil to saute


saute onions and garlic
add carrots tomatoes
pepper and apple
turn stove down to medium (4)
Stir every so often
cooked with lid on to keep moisture
cook for 15-20 minutes or until all is soft
can lower to low or simmer for last bit
watch to nmake sure does't stick on bottom

blend

yields 692 grams cooked
or abour 2.5 cups 278 gr per cup

250 gr onion, 30 gr garlic, 280 gr tomato, 199 gr red pepper, 102 gr carrot
175 gr apple

5 hot peppers with seeds weigh 58 gr
used 2 chocolate habenero without seeds with 11 grm

With just 2 habanero choco late- the sauce was plenty hot.
added Canadian sweet 1 Tbsp

Rhubarb Crisp


4 1/2 cups rhubarb cut into 1" pieces
1 cup sugar
1/2 cup flour
1 tsp cinnamon (optional)
Grease 9" by 9" pan
Spread fruit over pan

Topping
1 cup all-purpose flour
1/4 tsp salt
1/2 cup brown sugar
1 cup rolled oats
1/2 cup butter or margarine(melted)

Combine oats, flour, and sugar. Mix the melted butter thoroughly with dry ingredients. Spread over rhubarb and bake at 350 F for 30-40 minutes or until fruits are soft.

6-8 apples, peeled, cored, sliced

2 cups oats
1/4 cup wheat germ
1/4 tsp salt
1/4-1/2 cup oil OR melted margarine or butter
1 cup whole wheat or white flour
1/4 cup brown sugar
1 tsp vanilla
1/4 cup water

Combine oats, flour, wheat germ, salt and sugar. Mix the oil and water together and mix thoroughly with dry ingredients. Spread over sliced apples and bake at 350 F for 30-40 minutes or until apples are soft.




From a newspaper

1/2 cup all-purpose flour
1/4 tsp salt
1 cup dark brown sugar
1/2 cup rolled oats
1/2 cup butter or margarine
6 cups apples, pared, cored, sliced thin
1/2 tsp cinnamon
1/2 cup water
1 tsp lemon juice
1 tsp lemon rind

Heat oven to 350 degrees. Combine flour, salt, sugar and oats. Cut in butter or margarine until crumbly. Place apples in a bowl, combine cinnamon, water and lemon juice and rind and sprinkle over apples until well coated. Put apple mixture in 8 or 9 inch square pan. Sprinkle flour mixture on top. Bake 45 minutes until golden brown

Recipe I use for a 9 x 13 pan

1 1/2 cups all purpose flour
1 1/2 cups Quick Oats
3/4 cup Brown Sugar
3/4 cup Melted margarine

If using 4 recipes of fruit in 3 inch steamer pans, use 3 recipes of topping.
